Easy Banana Pancakes – Just 2 ingredients

Who says that pancakes can’t be part of a healthy diet?

Who says that making pancakes from scratch is hard?

Who says that once you go gluten free that you can’t have pancakes ever again?

With this easy 2 ingredient recipe, yes you can!

This recipe is gluten free, AND dairy free so if you are sensitive to either you can enjoy these too.

Ingredients

2 1/2 ripe bananas

4 eggs

(optional cinnamon, pumpkin pie spice, pure vanilla extract)

Directions

Put 4 eggs into blender.  Add bananas. Pulse until blended.  (You can also just put it all in a bowl and smash/stir together).  If you wish you can add other seasonings listed above. 

Heat griddle until hot. Use cooking spray, coconut oil or grass fed butter to oil pan if you aren’t using a non-stick griddle. Pour pancake batter onto pan. Cook about 1 1/2 – 2 minutes until pancake when lifted slightly is medium brown underneath. Once it’s medium brown in color flip to the other side. Cook until done.

You can serve with blueberries, strawberries, bananas, and top with pure maple syrup.  Or, you can eat it with no toppings at all. It’s yummy as is.

Blueberry-vanilla muffins

Blueberry Vanilla Muffins {gluten-free}

Who doesn’t love blueberries?  In July we loaded up the kids and went blueberry picking.  It didn’t last long. 

The kids were hot and the thrill wore off faster than I would have liked.  But we did come away with 15lbs of blueberries when it was all said and done.

We ate some fresh, others we froze in anticipation for use in other recipes like smoothies, oatmeal, and muffins!

One of my favorite muffin recipes I am sharing with you today, blueberry vanilla muffins.  Blueberries are good for so many reasons.  Yes, they taste good and generally are a kid (and hubby) favorite.

Did you also know they are packed full of anti-oxidants and micro-nutrients?  They contain vitamin C, vitamin K, manganese, and don’t forget the fiber!  

Blueberries are often over sprayed with pesticides so look for organic berries or low spray berries. And if you can’t find those then enjoy what you can get in moderation.    

Double or triple the recipe and store some in your freezer or fridge for an easy on the go breakfast for those busy got to get to school or work days.  Simply re-heat in a warm (250 degree) oven for 10-12 minutes while you are getting ready in the morning.  Or pack a frozen muffin in a lunch box for a lunch time treat (the muffin should be completely thawed by the time you or your child sits down to lunch).

Ingredients:

  • 2 cups gluten-free all purpose flour
  • 2 teaspoons baking powder
  • 1/4 teaspoon salt
  • 1/2 teaspoon gelatin granules* 
  • 1 egg
  • 3/4 cup milk
  • 1/4 cup honey
  • 1/4 cup coconut oil, melted
  • 1 tablespoon vanilla extract
  • 1 cup blueberries

Instructions:

  1. Preheat oven to 400.
  2. In a large bowl combine the dry ingredients mixing to combine.
  3. In a medium bowl combine the wet ingredients and whisk together.
  4. Pour the wet ingredients into the dry and mix until just combined.
  5. Gently fold in blueberries.
  6. Bake at 400 for 18-20 minutes or until done. 

*Gelatin is a natural food source, helps aid digestion, and great for joint health.  The purpose for gelatin in this recipe is to lessen any crumble gluten-free baked goods seem to have.  Don’t have gelatin on hand?  Substitute xanthan gum in it’s place.

Quick and Healthy Back to School Breakfast Ideas

Not only am I a happy wife, but I am a happy homeschooling mom of 2.  I can’t believe that school is starting!  No more lazy mornings. One thing we never miss at my home is breakfast and neither should you. These healthy breakfast ideas are not only great for moms, they are perfect for anyone with a busy schedule!

We’ve all heard that breakfast is the most important meal of the day.  It gets us off to a great start. I know I’m not as crabby when I eat breakfast.  People who eat breakfast tend to have a healthier body weight.  Children and adults perform better mentally after having breakfast, which translates to better grades and doing a better job at work. 

Here are some quick and healthy back to school breakfasts that your family will love!

Yummy Muffin Breakfast Frittata-  I make these in big batches and freeze them. Or make them the night before you have a busy day, and just warm in the microwave!  You can add tons of veggies, a little cheese and they are wonderful! Sometimes I make them in various shaped muffin tins (my little princess loves hearts). :)

PBBB-  This is a super fast and healthy meal.  Take half of a whole wheat bagel and spread your favorite peanut butter on top.  My kids like to make their own peanut butter.  Top with a layer of bananas and you are good to go.

Delish Breakfast Sandwich-  Think “McBreakfast” sandwich but healthier.  Top a whole wheat English muffin with eggs, cheese and Canadian bacon.   You can make tons of these ahead of time, individually wrap in plastic wrap, place into a freezer bag, and freeze.  Pop in microwave to warm or in oven.  Yummy!

Shrek or Hulk Smoothies- Another popular quick and healthy back to school breakfast option are you guessed it green smoothies.  It literally takes about 3 minutes to make! Just add 2 cups baby spinach, 1 frozen banana, 1 cup peaches (fresh or frozen), 1 cup pineapple, 1 teaspoon spirulina powder, 1 tablespoon chia seeds, and enough water to mix in your blender. Blend until it’s perfect for you.

If your hubby or kids can’t get past the green color use ½ cup of spinach and 1 cup of berries to make it purple or red.
